Ordinary Days Become Extraordinary Days When You Serve This Luscious Dessert
This is a delicious dessert for any occasion, but it is a ‘must make’ for your sweetheart on Valentine’s Day. Regardless of the season of the year, this cake will make your dinner spectacular. In other words, celebrate the day – any day – by making an absolutely delectable dessert using this easy strawberry cake recipe. It is also the perfect way to end the meal when you honor your mother on Mother’s Day, and for goodness sake, don’t forget dad on Father’s Day! Or picture yourself and your family trapped in your house during a blizzard. You will pick up everyone’s mood when you serve this strawberry cake, and this little touch of spring will make your family happy.
Gather the ingredients to make this Easy Strawberry Cake Recipe:
1 pkg. white cake mix
1 small pkg. strawberry Jell-O (3 oz. size)
¾ cup cooking oil
½ cup water
5/8 cup frozen strawberries* and juice thawed
*For this recipe, I purchase frozen strawberries that have been sliced with sugar added. Do not use whole frozen strawberries unless you take the time to thaw, slice and sprinkle them with sugar, so they will make a little juice. Place the frozen, sliced and sugared strawberries in the refrigerator to allow them to thaw completely before using. Mostly what I can find in my local stores are 16-ounce packages. You will need 5 ounces for the cake and 5 ounces for the frosting; use the remainder for a smoothie. And of course, when this yummy fruit is in season, you can slice and sugar them, refrigerate them until they make a juice and then they will be ready to be used in this recipe.

Empty the white cake mix into a large mixing bowl. Stir in the small package of Jell-O, and blend it with the dry cake mix.
Make a medium size hole in the middle of the dry ingredients. Pour the cooking oil into this hole, and stir to blend with the dry ingredients.
Next, stir in the water, and using your mixer, beat until blended.
Add eggs one at a time beating well after each addition.
Lastly, pour in the strawberries, and mix until all ingredients are well blended.
Pour the batter into two well-greased and floured 9-inch cake pans.
Bake in a preheated 325-degree oven approximately 35 minutes. Test for doneness.
Allow the layers to cool for a few minutes in the pan, and then turn them out onto a cake cooling rack.
Once the layers are completely cool, slice the layers in half to make 4 layers. This can be done by using a piece of dental floss or thread or by using a long blade serrated knife. It helps to place the cake layer on a flat dish that you can easily turn while cutting.
Icing for the Easy Strawberry Cake Recipe
1 stick of butter, softened
5/8 cup frozen strawberries and juice thawed
1 box 10X Confectioners sugar, sifted
Beat the softened butter. Stir in a small amount of the Confectioners sugar, and alternate between adding the Confectioners sugar and the thawed strawberries and juice. Mix frosting until well blended.
Use the icing sparingly between the layers, so you will have enough icing to frost the entire cake. When finished, store this dessert in the refrigerator.
