Make a Thanksgiving Dinner Menu for Two
I have always cooked a large Thanksgiving dinner, at least for the last twenty years. This will be the first year that I will plan a Thanksgiving dinner menu for two. It will be just me and my baby for this very special holiday. I do not want it to be any less special or tasty than any of the others, but we would never eat the leftovers of a huge Thanksgiving dinner. This is the way that I am going to par it down.
My Thanksgiving Dinner Menu for Two
Cranberry and Pecan Stuffed Turkey Breast
Ingredients: 2 skinless boneless turkey breast 1 package of stove top stuffing herb dressing
1 can of jellied cranberry
3 tablespoons of butter
Pinch of salt, pepper, and garlic
Preparation:
Preheat oven to 350
Prepare stuffing mix according to directions
Chop up 3/4 of can of cranberry and add to stuffing, set aside
Slice remaining stuffing for garnish
Butterfly breast with a sharp knife and pound with mallet to flatten
Season with salt, pepper, and garlic
Spread stuffing mixture over breast and roll them up
Secure with string and slightly brown in med-high skillet
Place skillet in preheated oven and cook for 1 hour
Remove string and slice turkey rolls
Place on plate and garnish with cranberry slices
Easy Giblet Gravy
Ingredients:
1 cup of turkey stock with skillet drippings
1/4 can of condensed cream of chicken
1/8 of a teaspoon of black pepper and garlic powder
1/4 teaspoon of salt
4 tablespoons of milk
1 1/2 tablespoon of all purpose flour
2 eggs boiled, peeled, and sliced
Giblets, cooked and chopped
Preparation:
Bring turkey stock to a boil and season with spices
Add cream of chicken then reduce to low and simmer
Heat milk and stir in flour until smooth
Return stock to boil and milk mixture, eggs, giblets
Stir until thick
Green Bean Casserole
Ingredients: 1 can of cut green beans drained 1 tablespoon of sour cream 1can of cream of mushroom 1 cup of French Fried Onions Or Buttery crumble crackers Preparation: Preheat oven to 350 Mix green beans, sour cream, and cream of mushroom together Place in a casserole dish Top with French Fried Onions or crackers Bake for 30 minutes
Baked Sweet Potatoes
Ingredients:
2 Sweet Potatoes
1/2 teaspoon canola oil
2 tablespoons of unsalted butter
2 tablepoons of maple syrup
A pinch of ground cinnamon and salt
1/2 cup of marshmallows
1/4th cup of pecans, crushed
Preparation:
Preheat oven to 350°, prick potatoes with a fork, rub with oil
Place on baking sheet in oven for 1 hour
Cut potatoes in halves and scrape out flesh, reserve 2 of the skins
Mash potatoes and place in pan over low heat
Add remaining ingredient except for marshmallows and pecans
Whisk until smooth and hot
Place mixture back into the 2 skins and top with marshmallows and pecans
Return to the oven and bake for 10 minutes, broil for 1minute
Add some piping hot dinner rolls and a bottle of wine and this is the start of a fabulous evening. Doing it this way, you can have a turkey dinner menu for just the two of you. For all of the extras, just go visit all of your nearest and dearest relatives. Why? Because it's Thanksgiving!

I know it will be a different feel at Thanksgiving without the family near, but the festivities should still be fun.
