Making eggplant parmesan is a delicious meal when cooked on a George Foreman Grill. When you use George Foreman Indoor Grills you eliminate the need to use extra fat in your cooking. Using this eggplant parmesan recipe you eliminate the need for frying the eggplant since the frying is done on the George Foreman grill. The great part of making your eggplant this way is that after the eggplant is done it is crispy just like it was fried. This crispy texture is due to the fact that the George Foreman Grill gets so hot and cooks so evenly it has no choice but to be perfect. This recipe is very simple and once you make it on your George Foreman Grill you will never make it in a frying pan again. So let's get the George Foreman Indoor Grills out, warm them up and make some eggplant parmesan! Just as a note this recipe will feed a family of 5 as long as you serve it with a side like pasta.
Things You Will Need
Shredded Mozzarella Cheese (I usually use 2 Packs of pre-shredded cheese)
George Foreman Indoor Grill
Pasta or any other side dish
Slice your eggplants into about 1/4" slices. It is better to leave the skin on the eggplant, however some people like to peel their eggplant first. If you want to peel it go ahead, but I recommend not peeling it.
In a bowl put the eggs in and beat them as if you were making a scrambled egg. This is now your "egg wash".

Take your eggplant slices and dip them into the egg wash and then into the breadcrumb bowl. This will allow you to completely coat them with breadcrumbs.
While you are dipping and coating your eggplant slices turn on your George Foreman Grill to preheat. If you have a George Foreman Grill that has an adjustable heat setting make sure it is set on high.
Place your breaded eggplant slices onto the preheated George Foreman Grill. Close the lid and let the eggplant cook for approx 12 minutes.
While the eggplant is cooking prepare a baking dish by coating the bottom of it with tomato sauce.
Remove your crispy eggplant from the foreman grill and layer it onto the bottom of the baking dish
Once your layer is complete top it off with some sauce and a dusting of cheese. Then make another layer on top of that until the baking dish is filled. Once the baking dish is filled give the top layer of eggplant a healthy coating of sauce and cover it with shredded mozzarella cheese.
Cover the dish with aluminum foil and place it in the oven at 425 degrees for 30 minutes.
When the timer goes off take it out and enjoy.
