A fresh cut of meat will last a few days in your refrigerator is properly kept.  You can extend that to three or four months without a loss in quality if you correctly freeze your steaks and chops.  With just a little effort you can buy your favorite cuts of meat when they are on sale and shop out of your freezer months later.
