In another bowl, mix together 1/2 cup of egg substitute, 1 1/8 cup of applesauce, 2 tablespoons  of canola oil and 1 teaspoon of vanilla extract. Mix the blended applesauce mixture into the flour mixture in the large bowl. Fold in 1/4 of an ounce of chopped pecans and 1 1/2 cups of blueberries. Spread the batter between the muffin cups and sprinkle 1/2 cup of low fat granola over them, pressing it in a little to make it stick. Bake the muffins for 18 minutes and leave to cool on a rack before eating.
