Heat up 1 tablespoon of canola oil over a medium heat in a Dutch oven. Add 3 chopped medium-sized onions, 1 chopped carrot, 1 tablespoon of chopped (finely) jalapeño pepper, 2 crushed garlic cloves, 1 teaspoon of ground cumin and chili powder to your personal taste. Stir this mixture over the heat for 5 to 7 minutes, or until the carrot and onion is soft. Next add 1 1/2 cans of chopped tomatoes (including the juices), 1 teaspoon of brown sugar and 1/4 teaspoon of salt. Heat on high temperature for a further 5 minutes, then reduce the heat to a low setting. Stir in 1 can of red kidney beans and 1/3 cup of prepared bulgur. Simmer the chili for 15 minutes until it thickens. Garnish the dish with 1/2 cup of plain yogurt (non-fat), 1/3 cup of chopped scallions and 1/4 cup of chopped cilantro.
