Mushroom-Stuffed Chicken Breasts

Mushroom-stuffed Chicken Breasts

Ingredients to make Mushroom-stuffed Chicken breasts;
1/4 -pound butter, plus 2 tablespoons
1/2- pound mushrooms, finely chopped
1/2- teaspoon salt
1/4- teaspoon freshly ground black pepper
1-1/2- cup bread crumbs
1/4- teaspoon nutmeg
4 -chicken breasts, skinned, boneless, and halved
1- cup heavy cream

Step 1...
Wash, clean and halve the chicken breasts.

Step 2...
Preheat your oven to 350 degrees.

Step 3...
Melt 1/4- pound butter in a skillet. Add the 1/2 -pound chopped mushrooms,
1/2- teaspoon salt,and 1/4 -teaspoon freshly ground black pepper, and cook
stirring often, until mushrooms turn very dark and absorb all of the butter.
Remove from the heat and stir in 3/4 -cup of the bread crumbs and the
1/4 teaspoon nutmeg.

Step 4...
Divide the mushroom mixture into 8- portions and place each portion in the center
of each piece of chicken breast. Fold the chicken breast around the mushroom stuffing,
and place seam side down in a shallow baking dish.

Step 5...
Melt the remaining 4- tablespoons butter and brush over the chicken breasts.
Sprinkle with the remaining 3/4 -cup bread crumbs.
Pour on the 1- cup of heavy cream and bake for 30 minutes until the mushroom-stuffed
chicken breasts are lightly browned.

Serves 4 to 6.
