New Years Eve - Healthy Appetizers

New Year's Eve is just around the corner. Most of us make our list of resolutions, and somewhere in those usually includes the one about losing weight. Why not start the year out right by preparing healthy appetizers for your party. Healthy appetizers can be just as fulfilling and satisfying as those appetizers that are laden with fat. Ringing in the New Year with lower calorie drinks and healthy appetizers makes a statement about your commitment to your resolution. Starting out the year focusing on new lifestyle changes can begin with the party that you organize. This is the perfect way to do it. Here are some tantalizing healthy recipes that are bursting with flavor that will not show up on your waistline on the morning after your fun filled event.

Russet Potato Skins

4 Russet Potatoes

1 cup of low fat shredded cheese

1/2-cup low fat sour cream

2 scallions

Olive oil

Preheat oven to 425 degrees. Wash potatoes and pat dry. Using a fork prick several times and place in microwave. Cook on high for 8 to 10 minutes or until fork easily penetrate the flesh. After potatoes have cooled slice in half lengthwise. Scoop out the contents and discard. Leave a small amount of flesh inside the skin. Brush on some olive oil and bake for 20 minutes. Chop up scallion while skins are baking. Use the white part of the scallion for recipe. When potato is removed from oven sprinkle with shredded cheese and return to oven just until cheese melts. Remove and garnish with scallions and add a dollop of low fat sour cream. These healthy appetizers are less than 100 calories apiece.

Black Bean Dip with Mango

1 large chopped mango

1/3 cup of red onions

1 drained cup of black beans

1/4 cup of chopped cilantro

1 finely chopped Jalapeño pepper

1 lime

1 bag of bake tortilla chips

In a bowl, mix first five ingredients. Squeeze the juice of the lime over the contents in the bowl. Serve this healthy appetizer with baked tortilla chips.

Shrimp Fruit Kabobs

1 lb. of large shrimp peeled

A cantaloupe

A honeydew

1 can of pineapple chunks

3 tablespoons of honey

3 tablespoons of teriyaki sauce

1 teaspoon of lemon juice

Bamboo skewers

Cube cantaloupe, honeydew, and drain pineapple chunks. Mix honey, teriyaki, and lemon juice together to make a sauce. Thread shrimp and alternating fruit onto bamboo skewers. Drizzle with sauce and place on a broiler pan about 6 inches from heat. Broil for 8 minutes or until shrimp turns pink. Frequently brush with sauce and watch carefully to ensure that it does not burn. By combining fruit with seafood you are providing your guest with healthy appetizers that are loaded with Vitamin C and protein.

Peanut Butter Banana Wraps

1/2 cup of reduced fat peanut butter

4 whole-wheat 10 inch tortillas

1/4 cup of honey

2 bananas

1/4 cup of miniature semi-sweet chocolate chips

Lay tortillas out. Spread a thin layer of honey over each. Follow this with a layer of peanut butter. Slice up bananas into thin slices and layer on each. Sprinkle with semi-sweet chocolate chips. Roll up in a jellyroll. Place 4 toothpicks down the length of each roll and divide into 4 pieces. Make 16 hors d 'oeuvres. This is just one of the many healthy appetizers you can make that is good for you, but fulfills those with a sweet tooth.

You can always make a vegetable platter with a low fat dip. Another healthy appetizer to include is to cut up apples with peanut butter mixed with some melted chocolate slathered down on one side. Sprinkle these with some finely chopped up walnuts for a new twist on an old recipe. Your New Year's Eve healthy appetizers can reflect how you feel about the resolution that you have committed to for the following year.
