Russet Potato Skins

4 Russet Potatoes

1 cup of low fat shredded cheese

1/2-cup low fat sour cream

2 scallions

Olive oil

Preheat oven to 425 degrees. Wash potatoes and pat dry. Using a fork prick several times and place in microwave. Cook on high for 8 to 10 minutes or until fork easily penetrate the flesh. After potatoes have cooled slice in half lengthwise. Scoop out the contents and discard. Leave a small amount of flesh inside the skin. Brush on some olive oil and bake for 20 minutes. Chop up scallion while skins are baking. Use the white part of the scallion for recipe. When potato is removed from oven sprinkle with shredded cheese and return to oven just until cheese melts. Remove and garnish with scallions and add a dollop of low fat sour cream. These healthy appetizers are less than 100 calories apiece.

Black Bean Dip with Mango

1 large chopped mango

1/3 cup of red onions

1 drained cup of black beans

1/4 cup of chopped cilantro

1 finely chopped Jalapeño pepper

1 lime

1 bag of bake tortilla chips

In a bowl, mix first five ingredients. Squeeze the juice of the lime over the contents in the bowl. Serve this healthy appetizer with baked tortilla chips.

Shrimp Fruit Kabobs

1 lb. of large shrimp peeled

A cantaloupe

A honeydew

1 can of pineapple chunks

3 tablespoons of honey

3 tablespoons of teriyaki sauce

1 teaspoon of lemon juice

Bamboo skewers

Cube cantaloupe, honeydew, and drain pineapple chunks. Mix honey, teriyaki, and lemon juice together to make a sauce. Thread shrimp and alternating fruit onto bamboo skewers. Drizzle with sauce and place on a broiler pan about 6 inches from heat. Broil for 8 minutes or until shrimp turns pink. Frequently brush with sauce and watch carefully to ensure that it does not burn. Peanut Butter Banana Wraps

1/2 cup of reduced fat peanut butter

4 whole-wheat 10 inch tortillas

1/4 cup of honey

2 bananas

Lay tortillas out. Spread a thin layer of honey over each. Follow this with a layer of peanut butter. Slice up bananas into thin slices and layer on each. Sprinkle with semi-sweet chocolate chips.
