DPI
It stands for dots per inches and is simply put, a way to give a measure of the sensitivity of the mouse. For the same tiny or miniscule movement of the pc gaming mouse, the cursor will be capable of moving a far larger amount scaling according to the sensitivity. In general a 1600 dpi laser is enough to suit you well. Unless you have a hand that is agile and steady far beyond the norm, you would need to toggle down the sensitivity to manageable level to prevent the cursor from twitching. Anything beyond 3200 is probably not discernable to the human hand unless you have a 2560x screen.
Programming and Memory
Often, most of the professional gaming mouse will have extra buttons located on the side or top of the mice. This can be used to allow specific programming, like a series of key commands, or a particular button. This can be rather useful for certain types of games. For example, MMOs or Real time strategy games like world of warcraft or starcraft gaming. Probably not so helpful for games like Assassin's Creed 2.
If you have multiple computers and intend to use the mouse interchangeably, you would want to look out for inbuilt memory that will allows your key-binds to remain the same across computers.
Design and Grip
For many people, the first thing that would catch their eyes on a mouse would not be the DPI engine within, or the extra buttons. The first thing that catches their eyes would be the design of the gaming mouse. For some, it is paramount that it has to look good. For others, they place more premium on functionality.
Besides its looks, the more important thing is the ergonomics. It has to fit your style of holding the mouse. If you use a claw grip, navigating the mouse with your fingertips, you would do better with a lighter smaller mouse. If you rest most of your hand on the mouse, then that is a palm grip, and it is advisable to select a larger PC gaming mouse.
