Gather the ingredients to make this pineapple southern pound cake:

1 1/2 cups butter, softened

2 3/4 cups granulated sugar

6 eggs

3 cups flour

1 tsp. baking powder

1/4 cup milk

1 tsp. vanilla

3/4 cups crushed pineapple, drained

Let's cook!

Take the butter out of the refrigerator, and place it on the countertop so it will soften.

Place the softened butter and granulated sugar into a large mixer bowl. Cream together by hand, or with a mixer, until well blended.

Add the eggs one at a time, mixing well after each addition.

Combine flour and baking powder, and sift. Add to the butter, sugar, and egg mixture by alternating with the milk and vanilla. Mix until well blended.

Stir in the drained pineapple.

Grease and flour a ten-inch tube pan. Pour the batter into the pan. Using a spatula, smooth the top of the batter to even it out.

Bake the southern pound cake in a preheated 325-degree oven for approximately 1 hour and 15 minutes. Test for doneness.

Cool 10 to 15 minutes. While cooling, make the pineapple glaze; see the recipe below.

Pineapple Glaze

1/4 cup melted butter

1 1/2 cups 10 X Confectioners sugar

1 cup crushed pineapple, drained

Combine the melted butter and the confectioners sugar, mixing until smooth.

Stir in the well-drained crushed pineapple until well blended, and drizzle over the top and sides of the southern pound cake.

Allow the southern pound cake to cool, and then store it in the refrigerator.
