The pineapple is the symbol for hospitality, and what could be more hospitable than inviting friends in for southern pound cake and coffee.

This pound cake recipe is one of my mother's favorite recipes, and she made it often for our family. When I was a child, she taught me how to make cakes, and I often made them on Saturday for our Sunday dinner. I have many fond memories of this time of my life, and I have tried to make these same memories with my daughter. So now, I would like to share this luscious pineapple southern pound cake recipe with you.

Gather the ingredients to make this pineapple southern pound cake:

1 1/2 cups butter, softened

2 3/4 cups granulated sugar

6 eggs

3 cups flour

1 tsp. baking powder

1/4 cup milk

1 tsp. vanilla

3/4 cups crushed pineapple, drained

Let's cook!

Take the butter out of the refrigerator, and place it on the countertop so it will soften.

Place the softened butter and granulated sugar into a large mixer bowl. Cream together by hand, or with a mixer, until well blended.

Add the eggs one at a time, mixing well after each addition.

Combine flour and baking powder, and sift. Add to the butter, sugar, and egg mixture by alternating with the milk and vanilla. Mix until well blended.

Stir in the drained pineapple.

Grease and flour a ten-inch tube pan. Pour the batter into the pan. Using a spatula, smooth the top of the batter to even it out.
