Lunch Time Hustle: Preparing for Prawn Malai-Curry

It was Wednesday. I bought fresh prawns from the market and kept for washing. Then I started working on other household chores and after that I started playing in my mobile. The prawns completely went out of my mind. When I came out of my world, the clock was ticking 1:30 PM. I was too hungry and did not have much time to prepare for lunch. I rushed to the kitchen and started washing the prawns. I recalled a delicious prawn recipe which is a traditional Bengali delicacy and it was quick too. I put some rice in container immediately, so that the steamed rice would be ready by the time I prepare for my prawn malai-curry.

Prawns in Coconut Sauce

Time Required

Yield - Serves four.

Ingredients

Prawn - 400 grams

Spices

Coconut milk - 200 ml
Cloves - 5-6
Cinnamon - 4-5 (small sticks)
Green Cardamom - 3-4
Bay leaves (dried) -two
Mustard oil - 2-3 tablespoons
Turmeric powder - 1/2 teaspoon
Chili powder - one teaspoon
Onion (paste) - one tablespoon
Green Chili - two
Ginger and garlic paste - one teaspoon
Tomato (puree) - 1 ½ teaspoons
Powdered cumin seeds - one teaspoon
Coriander powder- one teaspoon
Sugar - one teaspoon
Salt  (for seasoning) - to taste
Coriander or cilantro leaves - one sprig

This is a creamy coconut milk and it gives nice texture to the curry. It is also the main ingredient of this recipe and adds to the flavor.

Bay leaves add unique aroma to any recipe and makes it royal.

Procedure

Wash the prawns thoroughly. Heat some oil in a pan. Shallow fry the prawns and keep aside. Now heat two tablespoons of oil (use mustard oil as it complements the flavors) in a pan. Once the oil is hot, add bay leaves, cloves, cinnamon and cardamom to it. Wait for 15 seconds and add onion paste. Wait for the onions to become translucent and then add ginger-garlic paste.
Dish

 

Sauté the ingredients for some time till the ginger-garlic paste gets cooked properly. Add tomato puree to the pan and stir for some time. Add a little (one teaspoon) sugar. Add turmeric powder, chili powder, cumin powder and coriander powder into the pan. Stir and season with salt. Now, add the fried prawns and sauté it for 30 seconds. Pour coconut milk into the pan and allow the mixture to be cooked for 4-5 minutes. Stir occasionally. Cook till you get the desired consistency and add two whole green chilies before switching off the stove. Garnish with a coriander or cilantro leaves. Serve hot with steamed rice.
