Peanut Soup

Peanut Soup is a common dish in West Africa. It is very popular because it can be consumed with many other main and side dishes. The reason why Peanut Soup is so popular is because of its irresistible delicious taste. There are many ways of making this soup because it is an easy and flexible recipe.

Ingredients: This will serve seven people

1 pound of meat chunks (your choice): Beef, Chicken, Lamb etc.

1 onion chopped in small pieces

2 whole onions each cut in half

1 large bell pepper cut in half

2 fresh tomatoes each cut in half

4 table spoon olive oil

2 cups of peanut butter

1 tablespoon ginger powder

1 packet or tablespoon Goya seasoning

1/2 teaspoon salt

1/2 teaspoon black pepper powder

4 cups of water




Making the soup

Wash meat thoroughly and place in a pot.

Put chopped onions in the pot with the meat.

Add the ginger powder and goya seasoning to the meat.

Heat the meat on medium heat for 20 minutes, mixing slowly and making sure there is some water left to steam and season the meat.

Add the olive oil to the meat and stir slowly until meat is lightly fried. This will take about 5 minutes.

Add black pepper and mix everything together for another 5 minutes.

Add 4 cups of water and let the meat boil for 20 minutes.

Put 2 cups of peanut butter into the pot. Stir slowly (the peanut butter doesn't have to be completely mixed with the water at that stage, so don't try to mix it by stirring for long periods of time).

Add the pieces of onions, red pepper and tomatoes. (Remember, only cut them in halves).

Add salt and close the pot to boil for 30 minutes.

Check occasionally and if soft, blend the vegetables with a blender. Make sure it is completely smooth.

Pour blended vegetables back into the pot and mix thoroughly. By now the soup will be light orange in color and ready to be served.

Can be consumed with Rice, Bread, Fufu or alone. Add any vegetables to the soup to your liking.
