This recipe for stew is an awesome way to use up leftover turkey from a holiday meal. It is good the day you make it, and even better the next day. Make this recipe for stew, and you will have something good to eat when you come home after a hectic day at work. Because it is so filling, carry some with you to work, and enjoy it for your lunch. If you have more than you can use, carry some to a senior or a shut-in; it will make their day.

You can also make this recipe for stew by just boiling two or three chicken breasts, and use them for the meat and broth. Leftover rotisserie chicken can also be used. And, if you have any leftover beef and broth, add it to the pot, too. 

The difference between stews and soups is the liquid. A recipe for stew will require less liquid, making them thick, while soups typically are not thick. This recipe for stew is full of vegetables and meat, with a small amount of broth, just enough that you can enjoy eating it with a spoon. Another recipe for stew may be so thick that it must be eaten with a fork. If you want a texture that can be eaten with a fork, just add some thickening to this recipe for stew. 

Gather the ingredients to make a recipe for stew:

3 carrots, sliced

2 peppers, chopped

1 large onion, chopped

3 medium potatoes, chopped

3 stalks celery, sliced

3 cups cooked turkey or chicken, chopped

1 cup turkey broth

2 cans diced tomatoes

1 can corn

1 can butter beans

Let’s Cook

Slice or chop the carrots, peppers, onion, potatoes, and celery. Place the vegetables in a large five-quart Dutch oven, and add enough water to cover. Bring to a boil, and then lower the temperature to just a simmer. 

Chop up the leftover turkey, and add it to the vegetables in the pot. Add turkey broth. If there is no leftover turkey broth, use chicken broth or dissolved bouillon cubes in water (follow the directions on package). Make sure there is enough liquid to cover the ingredients in the pot; if necessary, add some water. 

Add the diced tomatoes, including the liquid in the can. If you only have canned whole tomatoes, then place them in a bowl, and cut them up before adding.

Add a can of corn, including any liquid.

Add a can of butter beans, including any liquid.

When making this recipe for stew, add salt, pepper, and sugar to your taste. Simmer about 45 minutes.

When done, serve it from a beautiful soup tureen, to add an extra touch. To complete the meal, make a fresh garden salad, or slaw, some homemade bread, a delicious dessert, and your family won’t recognize that leftover turkey.
