My Favorite Recipe for Swiss Steak

Gather the ingredients to make this recipe for Swiss steak.
2 tbsp. flour
1 tsp. salt
1/8 tsp. black pepper
1-½ lbs. top round beef
2 tbsp. olive oil
2 cups onions, sliced
1 tsp. dry mustard
½ tsp. chili powder
2 tsp. Worcestershire sauce
2 cups canned tomatoes
½ tsp. oregano
whole grain brown rice
Combine flour, salt, and pepper in a plastic bag.
Slice the top round into bite size pieces. Drop these bite size pieces into the bag, and shake to coat. (Do not cut raw meat on a cutting board that you use for cutting raw vegetables. Keep, and mark, one cutting board for meat and another one for fresh vegetables.)
Slice the onions into uniform slices, enough to equal two cups.
Measure the olive oil into a 10-inch sauté pan. Place the bite size pieces of top round in the pan to cook. Stir while browning on each side; top with the onion slices.
Combine the seasonings and tomatoes; pour over the beef and onions in the pan. (If using fresh tomatoes, the easiest way to peel them is to drop them into boiling water. After a few seconds, take them out of the boiling water, and place them on a plate to cool. Now, the skin will easily slip off the tomatoes. Place on a cutting board, and using a sharp knife, cut the peeled tomatoes into eighths, and remove all the seeds before adding to the meat and onions.)
Cover and cook over low heat for about 1 hour and 30 minutes or until tender. Stir occasionally while cooking.
Cook the whole grain brown rice according to the package directions for four servings.
Serve this savory entrée over rice and enjoy.
