Rice Side Dish Recipes

Curried Rice Pilaf

1-tablespoon butter
3/4-cup uncooked long-grain white rice
1-tablespoon olive or vegetable oil
1-medium sized onion, finely chopped
1-stalk celery, thinly sliced
1-1/2-teaspoons curry powder
1-3/4-cups chicken broth
1/2-teaspoon salt
1/8-teaspoon black pepper
1/2-cup raisins (optional)
1/3-cup coarsely chopped toasted pecans

Step 1...In a large saucepan, melt butter over moderate heat. Add rice and cook for 5 minutes or until lightly browned. Remove the rice from the saucepan.

Step 2...In the same sauepan, heat the oil over moderate heat. Add the onion, celery, and curry powder and cook for 5 minutes or until vegetables are tender.

Step 3...Stir in the rice and add the chicken broth, salt and pepper. Bring to a boil, lower the heat and simmer, covered, for 20 minutes or until rice is tender and liquid is absorbed. Stir in raisins and pecans. Cook, uncovered, for 3 to 4 minutes more or until heated through.

Makes 6 side dish servings.

Pilaf with Pistachio and Pine nuts

1-1/2- cups chicken broth
3-teaspoons butter or margarine
1/2-teaspoon salt
1/4-teaspoon ground mace or ground allspice
2/3-cup uncooked long grain white rice
1/4-cup pistachio nuts or chopped pecans
1/4-cup pine nuts or slivered almonds
Or 1/2-cup of any one

Step 1...In a medium size saucepan, bring the chicken broth, 1-teaspoon of butter, the salt and mace to a boil over high heat. Stir in the rice. lower the heat and simmer, covered, for 20 minutes or until the rice is tender and liquid is absorbed, transfer rice to a warm serving bowl.

Step 2..Meanwhile, in a small skillet, melt the remaining 2 teaspoons butter over moderate heat. Add the pistachio and pine nuts and cook for 1 to 2 minutes or until light golden, stirring frequently. Sprinkle the nuts over the rice.

Makes 4 side dish servings.

Bulgur Wheat Pilaf

1-tablespoon butter or margarine
1-medium size sweet red or green pepper, chopped (or for color, use 1/2 of each one)
6-green onions with tops, sliced
2-cloves garlic, minced
3/4-cup bulgur
1-3/4-cups chicken broth
1-teaspoon dried thyme leaves
1/4-teaspoon salt
1/4-teaspoon black pepper

  In a large saucepan, melt butter over moderate heat. Add the green pepper, green onions and garlic, cook for 5 minutes or until vegetables are  tender, stirring often. Stir in the bulgur, add the chicken broth, thyme, salt, black pepper and bring to a boil. Lower heat, simmer covered for 15 minutes or until bulgur is tender and liquid is absorbed.

Makes 4 side dish srvings.

Turkish Pilaf

1-tablespoon butter or margarine
3/4-cup uncooked long-grain white rice
1-tablespoon olive or vegetable oil
1-large yellow onion, finely chopped
1-3/4-cups beef broth
1/2-teaspoon salt
1/4-teaspoon ground cinnamon and ground allspice or mace
1-3/4-cups chopped tomatoes or 1-can (14 oz.) tomatoes , undrained and cut up
1/3-cup currants or raisins
1/3-cup slivered almonds or pine nuts, toasted

Step 1...In a large saucepan, melt butter over moderate heat, add rice and cook 5 minutes or until lightly browned. Remove rice from saucepan. In the same saucepan, heat the oil over moderate heat, add the onion and cook for 5 minutes or until onion is tender.

Step 2...Stir in the rice, add the beef broth, salt, cinnamon, and allspice. Bring to a boil, lower the heat and simmer, covered for 20 minutes or until rice is tender and liquid is absorbed. Stir in the tomatoes, currants and almonds. Return to a boil, lower the heat and simmer, covered for 2 to 3 minutes more or until heated through.

Makes 6 side dish servings
