Roasting A Chicken With Rosemary And Basil Recipe

Roast Chicken Recipe

I love roast chicken because it reminds me of when we are baking around the holidays. The aroma of all the blended spices and fresh herbs wafting through the kitchen and throughout the house is comforting.

Now, I don't have to wait until the holidays anymore to enjoy this feast. A simple, basic roast chicken recipe can be easily modified to creat different recipes, each with their own distinct flair and flavor any time of the year. The main flavors for this particular recipe are rosemary and basil, so this is just one example of what you can do with fresh herbs.


  • one 4-5 lb. whole chicken
  • one lime or lemon
  • 2 cups water
  • 3 tbsp. fresh ground garlic
  • 1/4 cup Worcestershire sauce
  • 1 tbsp. mushroom flavored dark superior soy
  • fresh sprigs of rosemary
  • fresh basil leaves
  • 2-3 tbsp. of your favorite spice mix 


  • Remove chicken from wrapper and rinse off any bloody liquid
  • Place in a medium size bowl
  • Cut lime or lemon in half and squeeze all over the outside and the inside cavity
  • Let sit for 20 minutes
  • Rinse under cold running water until the water runs clean
  • Add water to the chicken in the bowl
  • Season with spice mix, garlic, Worcestershire sauce, and soy sauce
  • Gently loosen the skin from the breast
  • Place sprigs of rosemary and basil leaves under the skin of the breast
  • Immerse additional sprigs of rosemary in marinade
  • Marinate at least one hour or overnight in refrigerator if possible
  • If chicken is marinated overnight, bring as close as possible to room temperature before baking
  • Preheat oven to 350 degrees Fahrenheit
  • Transfer chicken and marinade to an oven safe shallow baking dish
  • Place dish on middle rack
  • Bake for approximately one hour and twenty minutes to one and a half hours
  • Baste chicken every 10 minutes using the gravy in the baking dish
  • Add an additional cup of water halfway through baking and stir into the gravy in the baking dish
  • Remove chicken from oven and let it rest approximately 10-15 minutes before carving

      COOK'S NOTE:

  • Cooking temperature and time may vary according to appliance
  • Taste a bit of your spice mixture first and only add more kosher salt and coarse ground black pepper to taste when seasoning chicken
