Unless you have a passion to cook cooking meals is can feel like a chore. Most of the time cooking requires a lot of preparation and clean up and time is needed to do both. Busy schedules don't always allow
Salads can be easily transformed into a delicious satisfying meal. With a little creativity, on hand ingredients and about 20-minutes of time a person can prepare an entrée sized salad and with added protein. When the weather turns warm I eat salads all the time and in this article I share some of the salads I've whipped up in the past.

You can buy Earthbound triple washed Spinach to shorten the preparation time or you can buy a bushel of Spinach but if you do make sure you thoroughly rinse it because Spinach is a dirty lettuce. I suggest rinse, soak and rinse again.
Before mixing the cold ingredients place the walnuts in a small frying pan, drizzle honey or pancake syrup and caramelize over a low flame. Make sure you stir them not to burn them. Place the green apples in a small frying pan over a low flame to soften the apples and to mellow the sour flavor of the apples.

To speed up the preparation time before mixing the cold ingredients place the pecans in a small frying pan, drizzle honey or pancake syrup on them and roast over low heat to give them a light caramelize taste. Place the pears and apples in a small frying pan over low heat to soften and bring out the flavors. Let cool for ten minutes before you place the hot ingredients over the cold salad. By the time you finish mixing the cold ingredients and clean up, that should be enough time for the pears and apples to cool.
Adding sweet ingredients to mixed bitter lettuce leaves like Arugula, Endive and Radicchio creates a balance in flavor. Suggested dressing is a sweet balsamic vinaigrette.
Whip up an anti-pasto salad, clean up and be eating in less than 20-minutes. During the warmer months I really enjoy home-style cold anti-pasto salad. Salami, pepperoni, ham and provolone, mozzarella or even swiss cheese can be used. No need to follow an exact recipe. I buy fresh cold-cuts and most of the time I have plenty of ingredients on hand like canned shittaki mushrooms, sweet red peppers, jalapeno peppers, red and white onions, green and black olives and sun-dried tomatoes. Of course using all fresh ingredients is recommended but most of the time I have onions, sweet and hot peppers and olives in the refrigerator. In my household salad ingredients are considered condiments and usually are stocked in the refrigerator door.
To show a good example of mixing what you have on hand the picture below includes the ingredients that most of the time I stock up in the cabinets or refrigerator. I like to mix a little bit of everything and with a couple of slices of bread I have a flavorable delicious filling salad meal. Dressings? My cabinets are usually stocked with olive oil, vegetable oil, red vinegar, balsamic vinegar, herbs, spices and in the row of condiments on the refrigerator door a couple of salad dressings are available.
More fast and easy options to whip up something delicious in about 20-minutes are tuna and egg salad sandwiches. Instead of the old dull-drum adding mayonnaise, salt and pepper be more creative by adding white or red onion, carrots, celery, green or red pepper and instead of using plain mayonnaise use avocado or olive oil mayonnaise then add salt and pepper to your liking. Instead of using iceberg lettuce use dark mixed greens like spinach because the darker the leaf the more flavor it holds.

With a little planning ahead you can do a lot with very little. Stock up on ingredients that you can use for multiple quick fast easy meals.
