Old-Fashioned Chocolate Secret Ingredient Cake

Potato is the secret ingredient in this very moist cake. An awesome dessert to be sure.

2-cups all-purpose flour
2-cups white granulated sugar
1-cup unseasoned mashed potatoes, room temperature
3/4-cup milk
4-ounces semisweet chocolate, melted and cooled
3-large eggs
1/3-cup butter, softened
1-1/4-teaspoons baking soda
1-teaspoon salt
1-teaspoon vanilla extract
1/2-teaspoon baking powder
chopped pecans or walnuts, as garnish, optional
Chocolate frosting

Step 1...Preheat oven to 350 degrees. Grease and lightly flour a 13 by 9 by 2 inch baking pan.

Step 2...In a large mixing bowl at low speed, beat flour, sugar, mashed potatoes, milk, chocolate, eggs, butter, baking soda, salt, vanilla and baking powder for about 30 seconds, scraping sides often. Pour into prepared baking pan.

Step 3...Bake for 40 to 45 minutes or until a toothpick comes out clean. Place on a wire rack and cool completely. Top with chocolate frosting and decorate with chopped nuts.

Chocolate Frosting

In a small mixing bowl at medium, beat 1/3-cup softened butter with 3-ounces unsweetened melted chocoalte until smooth. At low speed, beat in 3-1/2 cups powdered sugar. Beat in 4-tablespoons milk, 1-teaspoon vanilla and a dash of salt. Beat until smooth, adding more milk if needed. Makes 2-cups.

Vegetarian Cake

This moist cake is a delicious, healthy twist on fruit cake. Serve it as is, or dizzle with a vanilla glaze and decorate the top with red and green candied cherries.

2-cups all-purpose flour
3-teaspoons baking powder
1-1/2-teaspoons ground cinnamon
1-1/2-teaspoons allspice
3/4-teaspoon baking soda
1/4-teaspoon salt
1-1/2-cups peeled, shredded apples (about 2 medium)
1-1/2-cups peeled, shredded carrots (about 3 medium)
1-1/2-cups peeled, shredded potatoes (about 2 medium)
3/4-cup currants or dried cranberries
3/4-cup raisins
3/4-cup chopped walnuts or pecans
1-tablespoon grated orange peel
1-1/2-cups packed brown sugar (light or dark)
3/4-cup butter, softened
3-large eggs
2-tablespoons light molasses

Step 1...Preheat oven to 350 degrees. Generously grease and flour a 10-inch fluted tube pan.

Step 2...Sift the flour, baking powder, cinnamon, allspice, baking soda and salt. Set aside.

Step 3...In a medium bowl, stir apples, carrots, potatoes, currants, raisins, nuts and orange peel. Set aside.

Step 4...In a large mixing bowl at medium speed, beat brown sugar and butter until fluffy. Add eggs and molasses and beat until well blended. At low speed, beat in the dry ingredients until moistened. Gradually add vegetable fruit mixture and beat again until well blended.

Step 5...Spoon into prepared tube pan and bake 60 minutes or until a toothpick inserted 1-inch from outer edge comes out clean and cake pulls away from pan. Cool on a wire rack for 10 minutes; remove cake from pan and cool completely. Cover and store in refrigerator. This cake is best on the second day after baking.

Vanilla Glaze

This all-purpose glaze has many uses. Great on Vegetarian Cake, icing for doughnuts, cinnamon rolls or other baked goods.

2-cups sifted powdered sugar
1/4-cup half and half
1-tablespoon butter, softened
1/2-teaspoon vanilla extract

In a small mixing bowl at medium speed, beat all ingredients until smooth and creamy. Makes 3/4 cup

I have heard of adding potatoes to cakes, but have not tried a recipe with them added. Thanks for sharing both of these delicious sounding recipes. I will be trying these soon.
