Shrimp Recipes: Shrimp and Rice Noodle Soup

This is a fantastic shrimp recipe as it is very easy to make, it will take you very little time and it is also good if you are on a diet. Very recommended for the winter months. Preparation time should take you around 10 minutes and cooking time around half an hour. This particular recipe serves four people.

Shrimp and Chicken Noodle Soup

Ingredients

200g fresh shrimp

One and a half litres of Japanese dashi

250g bamboo shoots

3 eggs

3 spring onions

1tbsp mirin

10 fresh spinach leaves

100g shiitake mushrooms

2tsp sugar

2tbsp soy sauce

300g dried rice noodles

Preparation

First, preheat your oven to 220 degrees Celsius.

In a saucepan, add the mirin, the soy sauce and dashi and bring to a boil. Slice thinly the shiitake mushrooms and add to the saucepan. Bring the whole mixture back to the boil, reduce the heat and let it simmer for about ten or twelve minutes.

At this point add you uncooked shrimp (peeled). Let it cook for a few minutes until the color turns into a redish pink. Cool the shrimp and the shiitake mushrooms in cooking liquid for a further eight to ten minutes, and make sure you reserve the shiitake mushrooms and the broth.

In a large saucepan bring water to the boil and cook your rice noodles. They will be done when they are tender. Drain and rinse under cold water and make sure you drain the noodles once more.

Once again, bring the dashi broth to a boil and divide the shrimp, bamboo shoots, spinach leaves, the rice noodles and the broth with the shiitake mushrooms among 4 dishes (they should be ovenproof). Make room in the middle and add 1 large egg into each dish.

Cook in the oven for about ten minutes or so or until the egg is done.

Serve piping hot and sprinkle the chopped spring onions on top.

This is an amazing dish as not only it tastes delicious but also it doesn't have too many calories. Seafood is really good if you are on a diet but you have to be careful as not to eat it too often because it is high in cholesterol. Shiitake mushrooms have lots of health benefits due to their active compound called lentinan (fights influenza and many other viruses). Soy sauce is believed to be a fantastic source of B6, and bamboo shoots prevent high blood pressure.
