Simple, Tasty, Healthy Lemon Grilled Chicken

If you've ever been looking for a new, simple and yet very tasty way of preparing chicken, I have something for you that I think you're really enjoy. It's our grilled lemon chicken. This is the way my wife and I prepare our boneless, skinless chicken breasts for cooking on our outdoor grill. It doesn't take much effort in the way of preparation, but it does take just a little bit of forethought so that the chicken can marinate for a while to give you the best possible flavor.

I'll admit it from the get-go; I love chicken and I love lemon. Therefore this recipe was bound to be a winner for me from the very start. Once I tried it a few times and shared it with others, I realized that I had a real winner on my hands. In fact, my step son has even requested my grilled lemon chicken a few times when he has come home from college. Without getting into the details, we'll just leave it at the fact that for him to request some of MY cooking is saying something!

OK, so in addition to your quality boneless, skinless chicken breasts, the only ingredients you'll need are some good quality olive oil, a lemon or two (I guess more than that if you're planning on cooking a LOT of chicken; what I'm talking about is for somewhere in the neighborhood of 3 to 8 chicken breasts), some kosher salt and some cracked pepper.

All you do is combine the lemon juice, olive oil, salt and pepper and let your chicken marinate in it for at least 4 hours. We prefer to prepare it in the morning, letting the chicken sit for the whole day before grilling it.

While you can prepare your marinade in any container that suits you, we have found that putting it in a large zip lock bag works very well. We then put the chicken inside of the zip lock and seal it up, and place that inside of a bowl in the refrigerator so that everything is kind piled up on top of each other. You can also pick up the bag and kind of massage it to get a good even coating on all the pieces of chicken.

I like to get the grill good and hot so that the meat gets seared at first, on both sides, before turning the temperature down, closing the lid and letting it cook for about 15 minutes.

One thing to be aware of is that because of the olive oil, you may get flames jumping up and licking the meat more than you're used to (this is where an outdoor electric grill can come in handy). It's OK, but keep an eye on it to make sure the chicken doesn't get too charred.

That's it. It's simple and turns out tasty, juicy chicken that has a nice lemony bite to it. Plus, you know that cooking with olive oil is a good thing to do for your health overall, so any time I can find another excuse to cook with it, I'm happy. In fact, it tends to put me in a "healthy mood" such that when I prep in the morning, I get motivated for an overall healthy day. I'll often load up my car bike carrier and put some good miles in knowing I have a tasty dinner waiting for me at the end of the day.
