Fluffy Spoon Bread

If you have never eaten or made a spoon bread, this is an easy way to add a bread dish to your meal.  The food group of bread is not always a food that accompanies your meal on the side or used for making your favorite sandwich. Sometimes the bread can be the main dish at your meal. This is a super easy recipe for making spoon bread that you can serve to your family and friends when you want to get lots of compliments for your efforts in the kitchen.

Do not let the souffle style of making this dish scare you. Once you make this bread the first time, you will see how simple and easy it is to make and will make it again and again.

This bread is a light souffle type bread that is spooned onto the plate and eaten with a fork. You can serve this as an accompaniment to your meal or serve it as part of your meal. Either way your family and friends will be delighted at the fluffy delicious bread dish.

Ingredients List:

1 1/2 cups boiling water

1 cup cornmeal

1 tablespoon butter or margarine, softened

3 eggs, separated

1 cup buttermilk

1 teaspoon salt

1 teaspoon sugar

1 teaspoon baking powder

1/4 teaspoon soda

Directions for making:

Heat the oven to 375 degrees. Grease a 2 quart oven proof casserole dish. In a large bowl, stir the boiling water into the cornmeal. To prevent lumping, continue stirring the cornmeal until the mixture is cool. Next blend in the butter and the egg yolks. Next stir in the buttermilk, the salt, the sugar, the baking powder and the soda.

On high speed of your mixer, beat the egg whites until they are stiff and fluffy. And then fold them into the cornmeal batter. Pour this mixture into the oven proof casserole dish and bake in the oven 45 to 50 minutes. Serve this delicious bread hot with lots of butter.

If you want to bake corn sticks instead, grease corn stick pans very well, Heat in the oven while mixing the batter. Spoon the batter into the heated pans to fill them about three fourths full. Bake these in a hot oven at 435 degrees for about 12 to 15 minutes.


Bacon Batter Bread: Add 1/3 cup crumbled, crisp cooked bacon to the batter just before pouring into greased baking pan.

And make sure that you have enough of this delicious bread on hand, it will disappear and everyone will want more.

Apart from bread pudding and bread and butter pudding, one which is a cake and the other a dessert I have never heard of a bread like this. Sounds interesting and the picture looks yummy, nice article

Very interesting - not heard of this until I spotted the article as a related article on the side of another bread article. Sounds like a good meal.
