1 1/2 cups boiling water
1 cup cornmeal
1 tablespoon butter or margarine, softened
3 eggs, separated
1 cup buttermilk
1 teaspoon salt
1 teaspoon sugar
1 teaspoon baking powder
1/4 teaspoon soda
Directions for making:
Heat the oven to 375 degrees. Grease a 2 quart oven proof casserole dish. In a large bowl, stir the boiling water into the cornmeal. To prevent lumping, continue stirring the cornmeal until the mixture is cool. Next blend in the butter and the egg yolks. Next stir in the buttermilk, the salt, the sugar, the baking powder and the soda.
On high speed of your mixer, beat the egg whites until they are stiff and fluffy. And then fold them into the cornmeal batter. Pour this mixture into the oven proof casserole dish and bake in the oven 45 to 50 minutes. Serve this delicious bread hot with lots of butter.
If you want to bake corn sticks instead, grease corn stick pans very well, Heat in the oven while mixing the batter. Spoon the batter into the heated pans to fill them about three fourths full. Bake these in a hot oven at 435 degrees for about 12 to 15 minutes.
Bacon Batter Bread: Add 1/3 cup crumbled, crisp cooked bacon to the batter just before pouring into greased baking pan.
