Slow Cooker Chicken Tacos: Three Easy, Delicious and Healthy Recipes

As a mother of three small children, I am usually exhausted by dinner time. In order to avoid giving in to the temptation to just get pizza or fast food, I use my slow cooker. I do all the prep work early in the day when I have the energy, and the food is ready by dinner. We love Mexican food around our house and I have found three easy, delicious, and healthy chicken taco recipes. 

Chili Lime Chicken Tacos

I found this recipe when I was trying to lose weight after my first child. I have modified it to fit the taste and nutrition requirements of my family. It is now a staple in our house and I almost always have the ingredients on hand.

Ingredients

              1-1  ½ pounds of boneless skinless chicken breast

              3 tablespoons lime juice

              1 tablespoon of chili powder

              1 cup of picante sauce or chunky salsa

Put the chicken in a 3 or 5 qt. slow cooker. Mix the lime juice and chili powder and pour over the chicken. Cook chicken on low for 4-6 hours, or until cooked through. Remove chicken from slow cooker and shred. Return shredded chicken to slow cooker, add picante sauce. Cook on high for 30 more minutes, until salsa is warmed. Serve on corn tortilla with sour cream, cheese, and other toppings of your choice. This recipe is also good to use for chicken taquitos, nachos, burritos and any other Mexican recipe that calls for shredded chicken.

Three Ingredient Chicken Tacos

This chicken taco recipe only has three ingredients that go into the slow cooker, but it is full of flavor. You can easily customize these tacos to different tastes because they pair well with a variety of toppings.

Ingredients

               1-1  ½ pounds of boneless skinless chicken breast

               1 can of Rotel tomatoes

               1 package Hidden Valley Ranch Mix

 Place chicken in a 3-5 qt. slow cooker. In a bowl combine the Rotel Tomatoes, and Hidden Valley Ranch Mix. Pour the mixture over the chicken and cook on low for 4-6 hours until the chicken is cooked through. Remove chicken from slow cooker and shred. Return chicken to slow cooker and put it on the warm setting. Serve on corn tortillas and top with fresh lime juice, cilantro, avocado and other toppings of your choice.

Tomatillo Chicken Tacos

I went through my pantry one day and found some ingredients that I thought would go well together. The result was a hearty, tasty and healthy chicken taco recipe.

Ingredients

               1-2  ½ pounds of boneless skinless chicken breast

               ½ jar of tomatillo sauce

               1 can of black beans, drained and rinsed

 Place chicken in a 3-5 qt. slow cooker. Pour the tomatillo sauce over the chicken and cook on low for 4-6 hours until the chicken is cooked through. Remove chicken from slow cooker and shred. Return chicken to slow cooker and add the black beans. Cook on high for 30 more minutes, until black beans are warmed. Serve on corn tortilla with sour cream, cheese, and other toppings of your choice.

Flavorful Black Beans

If you are looking for a side dish to pair with either the Chili Lime Tacos or the Three Ingredient Tacos, black beans are an excellent choice. This recipe is quick, easy and filled with fiber, protein and flavor.

Ingredients

               1 can of black beans, drained

               2 tablespoons of reserved liquid from black beans

               3 tablespoons of lime juice

               1 teaspoon of chili powder

               ½ teaspoon of ground cumin

Combine all ingredients and cook in a sauce pan over medium heat until heated through. Enjoy.
