Special Family Recipes that are Easy to Prepare and that Your Guests will Rave About

When I am asked to bring a dish for a Pot Luck Dinner, I have many choices which are usually a hit with other guests. Here are a few of my favorites:



2 heads of cauliflower - break into small pieces, place in a pot with about 1" boiling water. Cover and simmer for 10 minutes until tender. Do not overcook. Drain and place in a 9” x 12” greased baking pan.

6 tbsp. butter                                                                                                                                                   1/2 c. flour                                                                                                                                                          4 cups milk                                                                                                                                                         1 tsp. salt                                                                                                                                                        1/4 tsp. pepper

Melt the butter in a medium saucepan. Stir in the flour and cook together for a few minutes, stirring constantly. Remove from heat and blend in milk, salt, & pepper. Bring to a boil, stirring constantly and simmer until thickened. Pour sauce over the cauliflower in the baking pan.

1 pkg. Stove Top Dressing - follow the directions on the box. Spread the dressing evenly on top of the cauliflower in the casserole.

Bake at 350 degrees for 30 minutes.




3 stalks of broccoli (raw, do not cook)

1/2 cup raisins                                                                                                                                                                                                                                              1 pkg. shredded cheddar cheese                                                                                                               

1/4 purple onion                                                                                                                                            

4 slices of bacon, cooked


½ cup oil                                                                                                                                                       

¼ cup white vinegar                                                                                                                                    

½ cup sugar

Mix the dressing; then pour over the other ingredients. Refrigerate overnight.



Shepherd's Pie


1 lb. lean ground beef                                                                                                                                    

1 pkg. frozen peas and carrots (16 oz.)                                                                                                         

1 onion, chopped                                                                                                                                             

2 tbsp. water                                                                                                                                                     

1 can mushroom gravy (10 ½ oz.)                                                                                                             

10 oz. of boxed mashed potatoes. Follow directions on box. 

Microwave peas and carrots, onion and water for 10 minutes.                                                      Cook the beef, add gravy, and microwave for 3 minutes.                                                                   Mix the ingredients together and spoon into a 3-quart greased baking dish.                          Spread the prepared mashed potatoes evenly over the mixture.

Bake at 350 degrees for 20 to 25 minutes or until the potatoes are browned.





½ cup butter (1 stick)                                                                                                                                      

1 onion, chopped                                                                                                                                             

5 stalks of celery, chopped                                                                                                                          

½ cup all-purpose flour                                                                                                                                 

1 can chicken broth                                                                                                                                     

1½ cups whole milk                                                                                                                                        

1 tsp. salt                                                                                                                                                         

½ tsp. sugar                                                                                                                                                 

1/8 tsp. pepper 

Melt the butter in a Dutch oven. Add the onions and celery for 5-7 minutes. Add the flour and stir together for one minute. Add the chicken broth and the whole milk and stir until the mixture is smooth. Add the salt, sugar and pepper and let the soup simmer, uncovered, for 15 minutes.

Serves 4; double the ingredients for a larger batch.



Peanut Butter Fudge

PEANUT BUTTER FUDGE - no cooking necessary

1 cup butter (2 sticks)                                                                                                                                   

1 cup peanut butter                                                                                                                                       

12 oz. confectionary sugar                                                                                                                            

1 tsp. vanilla

Put the butter and peanut butter in a large bowl and microwave for 2-3 minutes until melted. Then stir together. Add vanilla. Add the confectionary sugar and stir well until all ingredients are combined nicely. If it seems too moist, add more sugar. Spoon into a greased pan and refrigerate for one half-hour. Cut into squares.

Nice recipes, I love the shepherds pie. And I do a variation of the cauliflower one with white sauce and grilled cheese on top. These look yummy
