A Tasty Summer Salad

To be enjoyed any time of year

Spinach and cucumber make a colorful side salad that is perfect for a picnic or barbecue. Don’t you love the fresh look? And this recipe is so quick and easy. Instead of the usual oil and vinegar marinade for the cucumber, I’ve used cider vinegar. I love it for salad dressings, and it works so well here with the cucumber too.

The ingredients are healthy too. Spinach is a favorite, and very good for your brain and body health. Even the cider vinegar is good for you. It is often considered a popular alternative medicine that may help with diabetes, digestion and even obesity. Olive oil too is a recommended healthy fat.

Cucumbers too provide interesting nutrients to your salads.  They contain lignans, a substance found in plants that helps reduce heart disease and several forms of cancer.  In addition, cucumbers contain anti-oxidants and anti-inflammatory properties. Other vitamins include K, C, and B1, plus magnesium, manganese, copper, pantothenic acid, and potassium.

While it is always interesting to see the amazing nutrient values of what we eat, I like cucumbers for their low calorie count and their taste.  When added to any salad, they provide a unique taste.

Usually I will add sliced or chopped onion to the cucumber.  Marinating for a few hours gives the dressing a unique taste when you mix it with your salad greens for serving.

You can add anything else you like. My favorites are sunflower seeds and some chopped celery, but it tastes good just like this. Hope you try it!

  • Serves: 4
  • Prep Time: 15 minutes
  • Total Time: 15 minutes


  • 1 cucumber, seeded
  • 10 ounces baby spinach
  • 1 clove garlic, finely chopped
  • 4 tablespoons cider vinegar
  • 2 tablespoons virgin olive oil
  • Salt and pepper
  • Fresh dill or basil (optional)


  1. Wash and dry spinach.
  2. Whisk oil and vinegar together until thoroughly combined.
  3. Add seasonings and blend. 
  4. Peel and seed a half of a cucumber, then slice.
  5. In a small container, combine cucumber with the blended dressing.
  6. Marinate for an hour or longer.
  7. When ready to serve, mix cucumber and dressing with the spinach.
