Set It And Forget It - 8 Stew and Soup Recipes For The Slow Cooker

Soups and stews are a great meal choice, especially when it is cold or rainy outside. They are great hearty dishes that can serve for more than one meal, even frozen for future meals. However, not everyone has the time it takes to tend to stews and soups over the stove top. Luckily, almost all soup recipes can be done in a slow cooker. Slow cookers are great alternative to making things on the stove top. You can prep the ingredients before work, place them in, and have a hot meal by the time you come home. You may have the worry that you slow cooker may be unsafe being left alone, but as long as there is nothing wrong with the electrical plug or your slow cooker, they are perfectly fine by themselves. Just be sure to test it a few times before you leave it unattended, just to be safe.

Below are some yummy soup and stew recipes that can be prepped easily and cooked in the slow cooker while you go about your daily business. The recipes range from beef, chicken, and seafood to vegetarian. So there is a little something for every taste. There are even recipes for yummy classics like cheesy broccoli soup, french onion soup, and decadent potato soup. So fish yourself out a recipe and enjoy!

Potato Soup

3 large potatoes, peeled and cubed

1/2 a stick of butter (or 1/4th of a cup)

1 14 ounce can of chicken broth

1 onion chopped finely

2 cups of milk

2 cups of water

2 cups of cooked and cubed ham

1 package of velveeta cheese, cubed

1 8 ounce carton of whipping cream

1 teaspoon of dried parsley

Place the potatoes, butter, broth, onion, milk and water in slow cooker. Cook on high for about 30 minutes then reduce heat to low, cover and cook for 6 to 7 hours.

Stir in ham, parsley, cheese and a little salt and pepper. Cook on high for 20 minutes or until cheese is melted. Stir in whipping cream and serve.

Comfort Stew

1 1/2 pounds of stew meat

2 10 ounce cans of French Onion soup

1 10 ounce can of cream of onion soup

1 10 ounce can of cream of celery soup

1 package of frozen vegetables

Brown stew meat in pan and place in slow cooker. Combine all soups and mix well. Turn slow cooker to high for about fifteen minutes, then reduce heat to low and let cook for 6 hours.

Add frozen vegetables and let cook for another 1 to 2 hours and serve.


Shrimp and Chicken Jambalaya

4 boneless, skinless chicken breasts, cubed

1 28 ounce can of diced tomatoes

1 onion, chopped finely

1 green pepper, chopped

1 14 ounce can of chicken broth

1/2 cup of white wine

2 teaspoons of dried oregano

2 teaspoons of Cajun seasoning

1/2 teaspoon of Cheyenne pepper

1 pound of cooked, peeled, de-veined shrimp

2 cups of cooked rice

Toss in everything except for the shrimp and rice and stir. Cover and cook on low for 6 to 8 hours.

Turn heat on high, stir in rice and shrimp, then cook for an additional 30 minutes.

taco soup

Taco Soup

1 1/2 pounds of ground beef

1 onion, diced

1 packet of taco seasoning

1 can of kernel corn with liquid

1 can of pinto beans with liquid

1 can of stewed tomatoes with liquid

1 14 ounce can of beef broth

tortilla chips

Shredded cheese and sour cream are an optional garnish

Combine beef and onion in large skillet, brown and drain. Transfer to slow cooker. Add taco seasoning, corn, beans, tomatoes, 1 cup of water, beef broth, and stir well.

Cook on low for 3 to 4 hours, serve over or with tortilla chips.

oriental stew

Oriental Beefy Mushroom Stew

2 pounds of stew meat

1 package of stir fry vegetables

1 can of beefy mushroom soup

1 14 ounce can of beef broth

2/3 cup of sweet and sour sauce

1 tablespoon of beef seasoning

Sprinkle stew meat with 1/2 teaspoon of pepper, brown in skillet and transfer to slow cooker. Combine vegetables, soup, broth, sweet and sour sauce, beef seasoning, and 1 cup of water into slow cooker and stir well.

Cover and cook on low for 7 to 8 hours.

camp stew

Camp Stew

1 pound of ground beef

1 onion, diced

2 large potatoes, peeled and diced

1 can of pinto beans

1 can of cream corn

1 can of drained corn kernels

2 cans of chicken chunks with liquid

2 cans of stewed tomatoes

1 cup ketchup

2 tablespoons of lemon juice

1 tablespoon Worcestershire sauce

1 teaspoon of hot sauce, you can use whatever you prefer, I enjoy Franks Red Hot

Brown beef and onions in a skillet and drain excess liquid. Add cooked beef and all the other ingredients into the slow cooker and stir well. Cook on low heat in slow cooker for 8 hours or until potatoes are tender.

french onion soup

French Onion Soup

6 sweet onions sliced thinly

1 clove of garlic, minced

2 tablespoons of butter

2 14 ounce cans of beef broth

2 teaspoons of Worcestershire sauce

6 slices of French Bread

6 slices of Swiss or provolone cheese

Cook onions and garlic in butter for about 15 minutes. Transfer to slow cooker. Add beef broth, Worcestershire sauce, and 1 cup of water. Cook on low for 5 to 8 hours.

Before serving, toast bread and place a slice of cheese on top. Place in oven to melt cheese. Put soup in bowls and top with the bread.

broccoli cheese soup

Broccoli Cheese Soup

1 package of frozen broccoli, thawed

1 package of velveeta cheese, cubed

1 package of white sauce mix

1 packet of dried vegetable soup mix

1 can of evaporated milk

1 14 ounce can of chicken broth.

Combine all ingredients plus 2 cups of water into the slow cooker. Cook on low for 6 to 7 hours. Stir one hour prior to serving.

I received a slow cooker as a gift a few years ago and never used it. These recipes look delicious enough for me to want to take it out of the box and actually cook something slowly! Oh, and by-the-way, potato soup is one of my favorites. Great info, thumbs-up!
