Easy Workday Grilling Recipes


As a working parent, evening meal preparation is a marathon. Thankfully, my spouse is a natural cook and my teens seem to have inherited that trait. The following are a few quick meals that we have enjoyed.


In summer months salad combinations can range from baby spinach with sweet strawberries to a red leaf lettuce/cucumber/ tomato/ peach offering. For those with a home garden, there is likely an abundance of tomatoes. Add cucumbers some vinegar, olive oil, mozzarella cheese, basil and a touch of sugar and chilies makes a wonderful accompaniment to grilled chicken/meat/fish.




Grilled vegetables especially the likes of corn, zucchini and eggplant are tasty when burnt. Corn can be grilled with all the husk removed or without. It merely necessitates a choice of olive oil or butter, some ground red chillies and lime. Sprinkle on the cooked corn and enjoy. Eggplant is an ideal vegetable to grill. It can be sliced in thick pieces or cut in half and place the cut side down on the grill. Consider brushing the eggplant with olive oil and sprinkle some pepper and a pinch of salt. It is best to keep the flame low if the eggplant is in half as the slow cook,brings out the flavors.

Moving on to meats, let us start with chicken. Recently had the pleasure of eating beer chicken. It was a whole chicken slathered in herbs, pepper, salt and ground chillies with an open can of beer placed inside the cavity. This does take several hours to cook but the result, a succulent, moist chicken. The skin is crisp and with a spice blend the taste is amazing. Some have also used an open can of root beer to vary the flavor.


Another chicken dish is to take chicken tenders and marinate them in some ground cumin, peppers, pinch of salt, either vinegar or lemon juice. Lime, orange or grapefruit juice or also alternatives. It helps to crush some garlic, ginger and onions. This dish is best left marinated for 24-48 hours. Additionally, cut small slits in the chicken which allows the marinade to absorb into the meat. This can also be prepared using chicken breast, legs or thighs.


Ground beef choices are beef, pork, turkey or lamb. These can be shaped into hamburgers or meatballs or kabobs. The easiest method, a packet of onion soup, some pepper, garlic and chillies. Mix with the meat and shape as you wish. Much of the above can be marinated and merely requires turning on the grill. While this saves time in preparation, it also allows the oils/vinegars/spices to blend into the vegetables and meats.


Finally, no meal is complete without dessert. The easiest recipe is grilled fresh pineapple. Another tasty choice, fresh strawberries marinated with a touch of balsamic vinegar. These can be grilled on a skewer or on a grill plate. It needs mere minutes. Lay the grilled strawberries on top of sliced grilled pound cake slices with a dollop of whipped cream or low vanilla yogurt or a scoop of ice cream. A delectable alternative is grilled fresh peaches. Desserts are so easy that a grill is not even needed as there is choice of ice creams, Italian ices, fresh fruit or yogurt with walnuts, chocolate chips and granola.
