Pasta recipes with chicken
Pasta salads and pasta dishes are nice on their own but sometimes they can feel a bit flat and
empty. In order to turn a good pasta dish in to a great pasta dish why not add some leftover chicken. There are many different pasta recipes with chicken although my favourite has to be the different types of pasta salads.
Pasta recipes with chicken - Chicken and feta pasta salad
This chicken pasta dish is light, which it makes it perfect for a light main meal, as a starter or a side dish for a bbq or family cookout.
In order to make this chicken pasta dish you will need five hundred grams of fusili pasta, five hundred grams of chicken, half a teaspoon of lemon pepper seasoning, half a teaspoon of garlic salt, one hundred and twenty grams of feta cheese crumbled, four plum tomatoes chopped, five table spoons of Italian salad dressing.
Season the chicken with the lemon pepper seasoning and garlic salt and grill in the oven for five to ten minutes or until the juices run clear. If you are using leftover chicken that is already cooked season and then warm through under the grill or in the microwave oven.
Bring a large pan of water to the boil, add the pasta and cook until al dente. You have to make sure you don’t overcook the pasta as this will turn in to a starchy and sloppy mess, so stand over the pasta and closely monitor it whilst it is cooking. Once the pasta is cooked drain and allow to cool down.
Once the pasta is cool out in to a large bowl, add all the other ingredients (leaving salad dressing until last), thoroughly mix together and serve.
Pasta recipes with chicken - Chicken and herb pasta Salad
This chicken pasta dish is full bodied and full of flavour. Whilst is can be eaten as a starter or a side
dish it is best eaten as a main meal.
In order to make this chicken pasta dish you will need five hundred grams of penne pasta, fifty grams of celery chopped, five hundred grams of chicken, fifty grams of parmesan cheese, two spring onions slice, mayonnaise, five table spoons of soured cream, two table spoons of milk, one teaspoon of dried basil, half a teaspoon of drie thyme, half a teaspoon of dried parsley, one hundred grams of frozen peas thawed and salt and pepper to taste.
Boiling chicken will leave it juicy and moist and this is the best way of cooking the chicken for this
dish. Boil a large pan of water, add the chicken and cook for ten to twelve minutes or until the juices run clear. Raw chicken is dangerous so make sure it is properly cooked all the way through. Once the chicken is cooked take it out of the water, shake off the excess water and then allow to cool down in the fridge. You can use leftover chicken for this chicken pasta dish and since this is pre cooked you won’t need to do anything else to it.
Once the chicken has been dealt with you need to bring a large pan of water to the boil and add the
pasta. Once again, make sure you don’t over cook the pasta so keep an eye on it whilst it is cooking. Once the pasta is cooked drain well and allow to cool down.
In a bowl add the celery, spring onions, mayonnaise, sour cream, milk, parsley, basil, thyme, cheese and mix well. Next, add the pasta and peas and mix together before putting in the fridge. Allow the chicken pasta salad to chill for at least one hour before serving.
Pasta recipes with chicken - Chicken, olive and red pepper salad
To make this chicken pasta dish you will need three hundred grams of pasta shells, two hundred grams of chicken, three spring onions sliced, one large red pepper chopped, a handful of black olives, half a cucumber chopped and salad dressing.
First off you need to cook the chicken. As there is no mayonnaise or olive oil in this pasta dish you need to ensure the chicken is as moist as possible. Boiling the chicken will leave it nice, tender and juicy and this is the best way to cook the chicken for this dish. Alternatively, you can use leftover chicken for this dish. If you are using leftover chicken make sure it is moist and has not dried out.
Bring a large pan to the boil and cook the pasta shells until al dente. Once again, make sure you don’t overcook the pasta. Pasta shells are thin and take a few minutes to cook so make sure you monitor them throughout the cooking process. Once the pasta is cooked drain and allow to cool.
Once the pasta is cool put it in a bowl and add all the other ingredients, leaving the salad dressing
until last and then toss and stir to ensure everything gets a nice coating. Chill the pasta salad for at least an hour before serving.
Pasta recipes with chicken - Chicken curry pasta salad
For something a bit different why not try this chicken curry pasta salad. Despite the name, this dish is also great for people who are not fond of spicy curries.
In order to make this dish you will need three hundred grams of macaroni, five hundred grams of chicken, three hundred grams of mushrooms sliced, one teaspoon of soured cream, four table spoons of mayonnaise, two cloves of garlic crushed, one teaspoon of curry powder, a yellow pepper chopped, one stick of celery chopped and salt and pepper to taste.
As with many of these chicken pasta recipes the best way of cooking the chicken is to boil it in a pan of water for ten to twelve minutes. When boiling the chicken for this dish add the mushrooms and cook at the same time. Once the chicken is cooked remove and allow to cool. This recipe has a lot of mayonnaise and liquid, therefore you can grill the chicken if you prefer. You can also use leftover chicken for this dish and since it uses mayonnaise and liquid it doesn’t matter if the leftover chicken has dried out a bit.
If you boiled the chicken bring the water to the boil and use to cook the macaroni. If you grilled the chicken, or used leftover chicken bring a pan of water to the boil add the macaroni and cook until it is al dente.
In a small bowl you need to make the ‘curry’ sauce. Add the soured cream, mayonnaise, garlic, curry powder, salt and pepper and thoroughly mix together. If you want a spicy dish you can add more curry powder, or use a hotter curry powder. If you want a more ‘sloppy’ dish you can
add more mayonnaise.
Once the pasta is cool put it in a bowl and add the chicken, mushrooms, olives, pepper and celery and mix together. Next, add the ‘curry’ sauce and toss the ingredients to ensure they all get a good coating. Chill the pasta salad in the fridge for at least two hours before serving.
