Thai Chicken Recipe - This tastes great cooked on the barbecue. You need to allow a little bit of time for this one, as you need to marinate the chicken for at least 24 hours in the fridge before your barbecue, for the best flavor. You can do less than that, but I would not go less than 6 hours.

Things You Will Need

Here is what you will need:

4 skinless boneless chicken breasts,

2 tablespoons rice vinegar

1 tablespoon soy sauce

1 teaspoon toasted sesame oil (this is the dark colored one, not the pale one)

1/4 teaspoon grated ginger

pinch of pepper

Peanut Butter Dressing to drizzle on cooked Thai chicken afterwards:

1/4 cup salad oil

2 tablespoons peanut butter

3 tablespoons rice vinegar

1 tablespoon soy sauce

1 teaspoon pack brown sugar

1/2 teaspoon toasted sesame oil

1/4 teaspoon crushed red peppers

Step 1

For the chicken marinade, place chicken in a strong sealable plastic bag. Combine the 2 tablespoons rice vinegar, 1 tablespoon soy sauce, the 1 teaspoon sesame oil, ginger and pinch of pepper. Pour over chicken in the bag. Seal the bag and put in the fridge for 24 hours. Turn the bag every time you are going into the fridge for something else. This will make sure it absorbs all those great flavors.

When you have the grill ready, take the chicken out of the bag and get rid of the marinade. Put the chicken on the grill for about 15 minutes until tender and no longer pink inside.

While the chicken is grilling though, you should make up this great dressing for the hot Thai chicken recipe.

Mix the salad oil into the peanut butter in a bowl. Then stir in the 3 tablespoons rice vinegar, 1 tablespoon soy sauce, the brown sugar and 1/2 teaspoon of sesame oil and the red pepper.

When your Thai chicken has finished cooking, slice it into smaller slices and place on plates and drizzle with your prepared peanut dressing

If you like the taste of Thai, then you are going to love this recipe. Just make sure to have these ingredients on hand, and you can whip this up for your next barbecue.

You can serve this with a green salad, or cooked peas.

Those zip lock bags are great for marinating meats, and the best flavor is when you can do this the day before and leave them in the fridge marinating for 24 hours.

As always with poultry, make sure to keep all surfaces clean, and make sure the chicken is cooked and no pink is showing. Don't forget to make the peanut butter drizzle, it just adds the finishing touch. You could also make the peanut butter dressing, to put over other chicken recipes, such as chicken meatballs, or use in a chicken meatloaf for another flavor.

Chicken does not need to be boring during barbecue season. You don't have to limit yourself to those boxed frozen chicken breasts anymore. Just get creative and start with this Thai chicken recipe, and you will have return guests for dinner. Even the die hard beef lovers will like this recipe.
