Thai Chicken Recipe - This tastes great cooked on the barbecue. You need to allow a little bit of time for this one, as you need to marinate the chicken for at least 24 hours in the fridge before your barbecue, for the best flavor. You can do less than that, but I would not go less than 6 hours.
Things You Will Need
Here is what you will need:
4 skinless boneless chicken breasts,
2 tablespoons rice vinegar
1 tablespoon soy sauce
1 teaspoon toasted sesame oil (this is the dark colored one, not the pale one)
1/4 teaspoon grated ginger
pinch of pepper
Peanut Butter Dressing to drizzle on cooked Thai chicken afterwards:
1/4 cup salad oil
2 tablespoons peanut butter
3 tablespoons rice vinegar
1 tablespoon soy sauce
1 teaspoon pack brown sugar
1/2 teaspoon toasted sesame oil
1/4 teaspoon crushed red peppers
For the chicken marinade, place chicken in a strong sealable plastic bag. Combine the 2 tablespoons rice vinegar, 1 tablespoon soy sauce, the 1 teaspoon sesame oil, ginger and pinch of pepper. Pour over chicken in the bag. Seal the bag and put in the fridge for 24 hours. Turn the bag every time you are going into the fridge for something else. This will make sure it absorbs all those great flavors.
When you have the grill ready, take the chicken out of the bag and get rid of the marinade. Put the chicken on the grill for about 15 minutes until tender and no longer pink inside.

Mix the salad oil into the peanut butter in a bowl. Then stir in the 3 tablespoons rice vinegar, 1 tablespoon soy sauce, the brown sugar and 1/2 teaspoon of sesame oil and the red pepper.
When your Thai chicken has finished cooking, slice it into smaller slices and place on plates and drizzle with your prepared peanut dressing
