Not only is this recipe very easy to make, it also contains nutritional yeast which is one of the most useful and delicious parts of a vegan diet. Nutritional yeast contains B12 (which is one of the more difficult nutrients to find animal-free sources for) and it has a cheesy and rich flavor that goes well with many dishes - from cheesy broccoli sauce to popcorn. It is the essential ingredient for flavour in this tofu scramble. It can be found in any health-food store or online. 

This scramble is a very versatile dish. You can add any number of other vegetables or substitute the carrots and tomato for veggies such as spinach, broccoli, or kale. It is best served with fresh, crusty bread and a cup of strong coffee in the morning. 

 

Makes 2 Servings. 

Ingredients:

2 TBSP olive oil

1 yellow or white onion, diced

2 carrots, chopped

3 cloves garlic, crushed

1 TBSP cumin

1 TBSP tumuric

2 TSP ground coriander

1 TSP cayenne powder

1 package medium-firm tofu

1 tomato, diced 

3-4 TBSP nutritional yeast

 

Instructions:

In a cast-iron or non-stick frying pan, heat the olive oil over medium-high heat. Add diced onion and chopped carrot and cook, stirring occasionally, until the onion is translucent and the carrots are tender. Stir in all the tumeric, coriander, cumin, and cayenne, and cook, stirring, until fragrant (about 1-2 mins).

Open tofu package and drain the water from tofu. Wrap the block in a clean tea towel, pressing the water out gently. It doesn't have to be totally dry, but the tofu will absorb the flavor of the spics better if most of the water is pressed out. Squeeze the tofu through your fingers into the pan of carrots and onions. This gives it a rough and irregular texture similar to scrambled eggs. Mix into spices until the yellow from the tumeric adds color to the tofu. Add the diced tomato and stir to heat through. Let sit, covered, until the tomatoes are just beginning to soften. Sprinkle the nutritional yeast on, stir, and let the mixture heat on low, covered, until heated through. 

Serve with fresh bread and enjoy!
