Avoid salt or limit its intake significantly. You can use spices and herbs instead. Boiled or steamed potatoes are excellent for mashing, use skimmed milk instead of cream for a low-fat purée. If you are vegan or suffer from dairy intolerance, use home-made vegetable stock or a low-fat milk alternative of your choice. Add more liquid, fresh herbs and mash for a couple more minutes to make a tasty and filling potato soup.
