Cheesy Banana and Grape Dessert
If you want a quick and tasty sweet to finish off your meal, then these may be worth a try. I have a bad habit of sticking to the same old routine so I decided to try something different with a couple of recipes I had and experimented with them. This is the result.
- 4 Sliced Bananas
- 2 cups grapes (seedless) or use large grapes, then cut in halves and remove seeds
- 500 grams cheese (use any type, I only had cheddar so grated it), ricotta
- 1 tablespoon butter
- 2 tablespoons brown sugar (1 tablespoon to fry 1 to sprinkle on top)
- 1 tsp ground ginger (or spice of choice)
Preheat large fry pan and melt butter on low heat. Stir in 1 tblspoon Sugar until dissolved. Add the bananas and grapes, stir until fruit coated and soft. Place into oven proof dish or ramekins. Sprinkle grated cheese, then ginger and rest of sugar over the top (or if using ricotta mix with ginger and then sprinkle sugar over the top). Place under grill until sugar melts.
Variations: Serve with Ice cream or Yogurt and chocolate sauce. Try it with other types of fruit.
Chocolate and Fruit Self Saucing Pudding
- 60 g Melted and cooled butter
- 1 cup SR Flour
- 1-1/4 cups brown sugar
- 1 egg
- ½ cup milk
- ½ cup mixed fruit
- 1 tsp vanilla essence
- 1 cup Boiling water
- 1 tablespoon cocoa
Grease a heat proof Microwave safe dish.
Mix flour and sugar in a bowl. Make a well in center and add the melted butter, egg and milk. Mix thoroughly, stir in the mixed fruit and vanilla essence. Pour into prepared oven proof dish and smooth over top.
Combine the hot water with the cocoa and pour over the back of large spoon evenly over the top of pudding mixture.
Place this in microwave on top of an upturned dinner plate. Cook on medium heat for 8-10 minutes. Check by inserting skewer into pudding, when it comes out clean it is cooked.
Serve hot with Ice cream or Yogurt and dust with icing sugar.
Variations : Use spices of choice, make with cocoa in pudding mix and in the sauce.
Microwave Bread and Butter Pudding
- 4 slices Bread
- ¾ cup mixed fruit
- 2-1/2 cups milk
- 1 tablespoon sugar
- 1 egg
- Grated cheese
- Vanilla Essence
Grease oven proof dish with butter
Break bread into small pieces and place in microwave safe dish
Add Fruit and mix into the bread
Beat milk, sugar and egg and add to bread, add vanilla essence
Use a spoon and push the bread into the milk making sure bread is covered. Stand for half an hour to allow the bread to soak up the milk.
Add more milk if necessary, as you do not want it to be dry.
Sprinkle grated cheese over the top and sprinkle with nutmeg.
Place in microwave on top of an upturned dinner plate. Cook on medium heat for 8-10 minutes.
If you want it browned on top place under grill for couple of minutes.
Serve with ice cream.
Variations: You may want to add a little custard powder to give it a different taste.
