Valentine's Whoopie Pies

These delicious Let's Make Whoopie Pies are perfect for your special loved one this Valentine's Day. The recipe is simple and easy to follow and takes a little over an hour to create. Just cook up these sweets for your honey and say "Let's Make Whoopie".

Things You Will Need

2 baking sheets

parchment paper

Cookies:

2 cups all-purpose flour

2/3 unsweetened cocoa

1-1/2 teaspoon baking soda

1/2 cup unsalted butter, softened

1 cup packed light brown sugar

1 large egg

1 teaspoon vanilla extract

1 cup low-fat buttermilk

Crystal sugar

Filling:

6 tablespoons unsalted butter, softened

2 cups confectioners' sugar

1 jar (7-1/2 ounces) marshmallow cream

2 teaspoons vanilla extract

Red food coloring

Step 1

Preheat your oven to 350 degrees farenheit. Line two baking sheets with parchment paper.

Step 2

Combine the flour, cocoa, and baking soda in a bowl. In a seperate bowl, combine the butter and sugar and beat until fluffy (usually three minutes). Add the egg and vanilla and beat until thoroughly combined. Alternately, add the flour mixture and buttermilk. Be sure the you begin and end with the flour mixture. Mix until smooth.

Step 3

Drop 1-inch spoonfuls of the batter onto the baking sheets. The batter mounds should be spaced two inches apart. Sprinkle half of the mounds with the crystal sugar.

Step 4

Bake the cookies until the tops are puffed and they spring back when touched. This usually takes 15 minutes. Transfer the cookies to a rack and let cool completely.

Step 5

Create the filling by beating the butter, confectioners' sugar, marshmallow cream, and vanilla extract in a bowl. Beat until the mixture is smooth (usually three minutes). Use the red food coloring to tint the filling pink.

Step 6

Spread a rounded tablespoon of the filling on flat sides of half the cookies. Place a cookie onto the other cookie. This recipe makes 18 Whoopie Pies. Nutrition Facts (per pie): 290 calories, 10 grams total fat, 6 grams saturated fat, 138 milligrams of sodium, 48 grams of carbohydrates, 36 milligrams of cholesterol, 3 grams of protein, and 1 gram of fiber.
