Vegan Cheese Sauce

There are many, many different vegan cheese sauce recipes out there, but finding one that actually taste good is another thing. For us cheese was one of the hardest thing to give up until this recipe was made! Also, you’re able to get plenty of good fat & protein from the cashews, good nutrients from the nutritional yeast, and help your body’s immune out with all those good seasonings!

What you will need:

1 cup of raw cashews.

2 cups of water.

¼ cup of nutritional yeast.

2 cloves of minced garlic.

2 teaspoons of onion powder.

1 tablespoon of lemon juice.

½ teaspoon of mustard powder. (I've also experimented with using one teaspoon of yellow mustard and it works as well.)

Add salt and pepper to your taste.

An additional option: 2 tablespoons of potato starch OR 3 teaspoons of arrowroot powder. 



To make this cheese sauce, puree cashews with water in food processor or blender. Transfer the liquid into a medium saucepan over medium heat. Continuously stir, as not to burn the sauce. The cashew and water mix does not take too long to heat up!

Add nutritional yeast, garlic, onion powder, mustard powder, and salt & pepper.

Cook until heated thoroughly and yeast has dissolved.

If a thicker consistency is desired, add 2 tablespoons of potato starch or 3 teaspoons of arrowroot powder and again, stir until the mix is dissolved and the desired consistency is reached.


Gluten Free Broccoli Casserole 

When we cut all the meats and cheeses out of our diet, my casserole repertoire went out the door. I wanted…. no I NEEDED some sort of comfort food! This definitely hits the spot every time!

What you will need:

1 head of cauliflower.

1 head of broccoli.

2 to 3 minced cloves of garlic.

2 tablespoons of Braggs Liquid Amino Acids.

Optional: 1 recipe of vegan cheese sauce.


Preheat oven to 375 degrees.

Chop up the broccoli head into bite-size pieces.

Grate or use a food processor to make small rice-like pieces out of the cauliflower head.

Combine all ingredients in an un-greased casserole dish.

If cheesy-ness is desired, pour pre-made cheese sauce over broccoli cauliflower mix and stir.

Cover with tin foil and bake for 30-35 minutes.
