Vegan Cornbread Recipe

Step 1
Lightly oil the cooking pan and set aside. Preheat the oven to 400 degrees.

In the mixing bowl, combine all of the dry ingredients and mix well with a spoon or spatula.

Make a well in the center of the bowl and pour in the soy milk and oil. Stir well until all large lumps are gone. Don't worry about any small lumps.
Step 4
Pour the cornbread batter into the baking pan and bake in the oven for 20-25 minutes. Check for doneness by inserting a toothpick or knife in- if it comes out clean, the cornbread is ready. Cool on a baking rack until ready to serve.
This vegan cornbread batter is a great jumping-off point for many other great recipes. Try making vegan corndogs, vegan fritters or vegan hush puppies with this batter. Make two recipes, because it will get eaten quickly.
