Weight Watchers Chicken Enchiladas
This was a good meal that was very filling. The texture of the enchiladas was pretty good; the tortillas gave way to my fork without being mushy or hard. The sour cream sauce was perfect; not too bland and not too spicy. The Weight Watchers Smart Ones chicken enchiladas had white meat chicken in them, which is what makes them so tasty.
Weight Watchers Chicken Enchiladas is a 6 point meal, so use caution when you decide to serve it. It does have a lot of sodium in it, be careful if you are on a reduced sodium diet.
While the Weight Watchers Smart Ones Chicken Enchiladas Suiza is part of the Classic Favorites collection, I had never seen it in my local grocery store before, so I decided to give it a try. This is a 6 point meal, which is a bit higher than the 4 or 5 point meals that I usually purchase, but the picture on the box looked really good, so I gave it a try.
I microwaved the Weight Watchers Chicken Enchiladas for about 4 minutes, after venting the plastic film. It smelled good as it cooked, and I was looking forward to trying this new Weight Watchers entree. The rice was clumped to the side, which is not unusual for microwave entrees. There were two chicken enchiladas in a sour cream sauce next to the spanish rice. I broke up the rice with my fork, and poured some of the sour cream sauce over the enchiladas with a spoon. Because I had a little bit of a Point surplus tonight, I decided to pair this dinner up with a serving of baked Tostitos tortilla chips, for a pretty tasty 8 point meal.
The chicken enchiladas were tasty, and had what seemed to be mostly white meat chicken inside of them. The sauce was pretty good; it was the right consistency, wasn't bland and had a little bit of kick to it. The rice was so-so, but again, I've learned not to expect too much out of rice in Smart Ones entrees.

This Weight Watchers Smart Ones meal went really well with my serving of tortilla chips. I used the chips to scoop up the extra sauce and rice and really did enjoy it. For those who are having a craving for Mexican food, give this one a try, you just might like it.
The box describes this entree by saying, "Southwest flavors come to life in this tasty dish of chicken enchiladas, accented with roasted green chiles, topped with sour cream sauce and served with zesty Spanish rice. So delicious, so satisfying... and another little way you can be good today. Smart Ones. Taste so good, you want to be good.
While I did see some colored "things" in the sour cream sauce, I didn't really notice that they were roasted green chiles. Either way, the sauce and whatever components it had in it were pretty good. The spanish rice had flavor, but was a bit stiff and clumpy. Other than that, I have no real complaints.
I'm not sure if I'd bring this meal into a Mexican restaurant with me if we were going out as a group. However, if I find that I am having a Tex-Mex craving of sorts, I would have no trouble buying this Weight Watchers entree again. It was great tasting, filling and held together well in the microwave. I hope you all enjoy it as much as I did. If you can afford the Points, add some baked tortilla chips to this and enjoy every last bit of the sauce and rice- yum!
