This recipe is a good example of the old English proverb, “Necessity is the mother of invention.” I needed dinner in a hurry! Having cooked a ham the day before, I already had cooked meat for a meal.

I thought about ham tetrazzini, but I did not have on hand the cheese and mushrooms that I would need. But I did have these missing ingredients in other forms, like mushroom soup and a box of Whole Foods Everyday Value 365 Brand Macaroni & Cheese. So, that is how I came up with this Ham Mac and Cheese recipe.

Gather the ingredients to make Ham Mac and Cheese:

2 tbsp. butter or margarine
1 medium size onion, sliced
1 medium/large size green or red pepper (or an equal amount of frozen pepper pieces)
1 can Cream of Mushroom soup
¾ cup of milk
2 cups chopped cooked ham
1 box Whole Foods Everyday Value 365 Brand Macaroni & Cheese
2 tbsp. butter or margarine
3 tbsp. milk

Let's Cook

In a 10-inch frying pan, place 2 tablespoons of butter or margarine, add in the sliced onion, and the sliced peppers. Cook on a medium/low heat until the onions become translucent.

Cook the pasta according to the directions on the Everyday Value 365 Brand Macaroni & Cheese package.

Gently stir the mushroom soup and the milk into the onions and peppers in the frying pan. When well blended, add in the chopped ham. Let simmer on a low heat while you prepare the mac & cheese.

When the pasta is done, prepare it according to the package. (Add a little more milk if necessary.) Spoon about three-quarters of the macaroni & cheese into the mixture in the frying pan, and stir to blend all the ingredients together. Leave the pan on the heat for a couple of minutes to allow the flavors to mingle.

A hot grilled Ham and Cheese Sandwich has been a favorite sandwich for years. It appeals to all ages, and it will keep the hunger pangs away for hours. Plus, it is a super easy leftover meal to make. It can be made using a griller or a frying pan.

You can use either leftover ham from a cooked ham you prepared, or you can use deli ham slices.

Gather the ingredients to make a Grilled Ham and Cheese Sandwich:

2 slices of bread for each sandwich
Ham slices to cover the bread
Slice(s) of cheese for each sandwich
Butter or margarine

Let's Cook

Spread butter or margarine on one side of a slice of bread, and place that side of the bread down on the grill or in a frying pan

Lay a slice(s) of ham on the bread, then a slice(s) of cheese, and then top it off with the other slice of bread. Be sure to spread the topside of the bread with butter or margarine.

Close the top of the grill, if using a griller, or if using a frying pan, then place it on the heat.

The griller will cook faster, so be sure to check for the degree of browning you want.

If using a frying pan, then you need to monitor it for browning, and when it’s ready, using a spatula, turn the sandwich over in the pan.

This Ham Stir-fry is easy to make, and a way to include extra vegetables in everyone’s diet, while using leftover ham at the same time. That’s a win-win deal!

This recipe makes up in a hurry, so it is a good choice for those evenings when you need to go out.

 

Gather the ingredients to make a Ham Stir-fry:

2 tbsp. brown sugar
1/2 tsp. ground ginger
2 tbsp. cornstarch
1/2 cup water
1 can pineapple chunks (20 ounce size can)
Instant brown rice
2 tbsp. olive oil
2 cups cooked ham, cut into chunks
2 cups frozen broccoli
1 medium size onion, sliced
1 medium size green pepper (or an equal amount of frozen pepper pieces)

Let's Cook

To make the sauce, measure the brown sugar, ginger, and cornstarch into a small bowl. Gradually stir the ½ cup of water into the brown sugar, ginger, and cornstarch mixture, making sure to mix well.

Drain the juice from the can of pineapple into a measuring cup, and blend it into the above sauce mixture. Place the pineapple chunks in a small bowl to be used later.

Cook the rice according to the directions on the package. I used Uncle Ben’s Whole Grain Fast and Natural Instant Brown Rice.

Pour 2 tablespoons of olive oil into your stir-fry pan. Place the ham, broccoli, onion, and peppers in the pan. Then, cover and cook them over a medium/low heat, stirring frequently, just until the frozen vegetable are thoroughly heated. Next, add in the pineapple chunks, stir to blend with the other ingredients, and heat long enough for the pineapple to be completely heated before adding the sauce.

Be sure to stir the sauce well before slowly pouring it over the meat/veggie mixture in the pan. After pouring the sauce, stir continuously while the sauce thickens.

Serve the Ham Stir-fry over rice.
