Yummy Lemon Bars

Do you have lemons and some basic baking ingredients on hand? Well this recipe may just be perfect for you. It is both sweet and tangy at the same time. It is fairly simple to make and tastes great.

Things You Will Need

For crust: 1 1/3 cup flour, 1/3 cup melted butter, 1/4 cup powdered sugar
For lemon filling: 2 cups white sugar, 4 eggs, 1/4 cup flour, 1 teaspoon baking soda, 2 lemons
Equipment: Electric mixer or electric beaters and bowl, juicer, fine grater, or zester, 13x9 in baking pan, oven mitt

Step 1

Preheat the oven to 350 degrees. In a small mixing bowl, combine 1/3 cup melted butter, 1 1/3 cup flour and 1/4 cup powdered sugar until combined. Press the mixture evenly into the bottom of the 13x9 inch pan. Prebake the crust for about 20 minutes or until lightly browned on top. Do not over bake the crust. Remove the crust from the oven and let cool for 5 minutes. While you are waiting for the crust to bake, proceed to step 2.

Step 2

Meanwhile, take the 2 lemons and rub them against the fine grater until you have most of the zest off the lemons. You could also do this with a zester. Do not grate the white part of the lemon just under the yellow peel as this is bitter and will make the lemon bars taste bad. Cut the 2 lemons in half and use either a hand juicer or electric spinning juicer to obtain the juice. Pass the juice through a strainer to remove the pulp and seeds. Measure out 1/3 cup of the juice for the recipe. Use the remaining lemon juice as desired.

Step 3

In the electric mixer, beat four whole eggs on medium speed until light yellow and slightly foamy. Add 2 cups white sugar, 1/4 cup flour, 1 teaspoon baking soda and lemon zest. Beat on medium speed until well combined. On low speed, mix in the 1/3 cup lemon juice. Pour the filling over the cooled crust.

Step 4

Place the lemon bars in the oven for 25-30 minutes or until lightly golden brown on top. Remove from oven and turn the oven off. Allow to cool completely. Sprinkle with powdered sugar from a sifter until a thin layer of powdered sugar accumulates.
To save time when making this recipe, it is recommended that you make the crust first and put it in the oven. Meanwhile, start grating the lemon peel and juicing the lemons. Mix the filling ingredients last.

Tips & Warnings

Be careful when removing hot pan from oven.
