If you are looking for an alternative to potato fries, zucchini fries are a great alternative especially for those on a lower carbohydrate diet.

Ingredients:
  • 2 zucchinis
  • 1 white
  • 1/4 cup skim milk
  • 1/2 cup shredded parmesan
  • 1/2 cup seasoned breadcrumbs

Preparation:

Preheat your oven to 425 degrees

Cut the Zucchini's into 3 inch slices or to the shape of fries you'd like.

Whisk your egg white in a bowl and mix in the milk, shredded parmesan and the breadcrumbs.

Coat a baking sheet with non stick spray, then dip each zucchini stick in the batter before placing them on the baking sheet.

Bake for 25-30 minutes or until the fries are golden brown.
