After gall bladder surgery you will be more sensitive to the fat content of your food than before. This will necessitate changing to a low fat diet. Something you should have done long ago. More than likely, you will be forced to change your eating habits and you will need to offset high fat foods by combining them with a whole grain such as rice which will absorb some of the excess fat.
