what To Do With Those Turkey Leftovers - Make Soup!

Clean out the fridge and make some soup with the holiday left overs.

Things You Will Need

left over turkey, celery, carrots, onion, turkey juice, egg noodles, broth from the turkey pan and have at least 2 cups of chicken broth on hand for additional flavor.


Step 1

Simmer 1 medium onion chopped and 4 stalks of celery in 1/2 stick of butter. Added 4 large carrots sliced.

Step 2

Add your chopped leftover turkey, any turkey pan drippings and 2 cups of broth. If you need to add chicken broth for flavoring to do so. Add 1 teaspoon of salt and 1 teaspoon of pepper. Bring to boil. Then simmer for 20 minutes and taste. If needed add another can of chicken broth to suit to taste or add 1 teaspo0n of salt.


Step 3

Continue this process until the right flavor then add egg noodles. I like mine thick - not a lot of broth. Some like a lot of broth -‚ soupy.‚ You decide at this point.


Step 4

Cook until noodles are done and turn off and let set for 10 minutes, then serve. I throw in a little of the stuffing also for a little added body to the soup.

Tips & Warnings

Make this within one week of the oringinal serving of turkey. Add some rolls and this is a great lunch!
